Puffed Apple Pancake 


   This is a great for breakfast or for supper.  Served with some Polish or Italian sausage it makes a great meal.   

6 Eggs
1 1/4 cups Milk
1 Cup  Flour
3 Tbls  Sugar
1 tsp  vanilla
1 tsp  Cinnamon
1/2 Cup Butter
2 peeled and thinly sliced Apples
3 Tbls  Brown sugar

Preheat oven to 425. In blender or food processor, mix eggs, milk, flour, sugar, vanilla, salt and cinnamon until blended.

Melt butter in a 12 inch quiche pan or a 13x9 baking pan in the oven. Arrange apple slices in pan. Return to oven until butter sizzles: Don’t let butter brown!

Remove dish from oven and immediately pour batter over the apples. Sprinkle with the brown sugar. Bake for about 20 minutes or until puffed and brown.
