Avocado Salsa


This is a really nice party dish tastes great with crackers or chips.  It makes a lot, I halved the recipe and it was enough for about 10 people.

1 package frozen corn (16 oz.)
2 cans sliced olives (1 1.4 oz.)
1  Sweet Red Pepper chopped
1 small onion chopped
5 garlic cloves minced
1/3 cup olive or vegetable oil
1/4  cup  lemon (lime) juice
3 Tablespoons vinegar
1 tea dried oregano ( I used Italian seasoning)
1/2 tea salt
1/2 tea pepper
4 medium ripe avocados

Tortilla chips

In a large bowl, combine corn, olives, red pepper and onion.   In a small bowl combine garlic, oil, lemon juice, vinegar, oregano, salt and pepper.  mix well.  Pour over corn mixture and toss to coat.  Cover and refrigerate overnight.  Just before serving chop Avocados and stir into salsa.   Serve with Tortilla chips or crackers.
