Barbecued Brisket
1 beef brisket around 3lbs 1/2 cup chopped onion Place brisket in a large Dutch oven. Add 1/2 cup of water. Cover and bake at 275 for 2 hours. Meanwhile in a medium saucepan sauté onion and garlic in oil until tender. Add everything else and simmer for 1/2 hour, stirring occasionally. Drain drippings from the Dutch oven and pour the BBQ sauce over the meat. Cover and bake for another 2 hours or until tender. Cool, slice, reheat and serve. Its best to let it set in the refrigerator over night so that it will be nice and firm when you slice it. It will just fall apart if you try to slice it while its hot. Then put it in the oven an hour or so before you are ready to serve it.
