Beans Beans and more Beans 

As you probably know beans are a staple in the Mexican   Diet. This will give you a rough idea how to make them. The thing is that there is no one way to make Mexican Beans. I have noticed that in restaurants you almost always get a pasty type beans but in the real Mexican home you are more likely to get whole beans. The interesting thing is that prepared this way you will not get a lot of gas, also note that there is no sugar or sweetener added.  If you like beans and want to try something besides Pork and Beans this is for you. (I hate to say it as they taste really good but this recipe is really very good for you)

Wash the beans and put them into a pot with the onion. Add water to cover and an extra 1/2 inch. Bring to a boil then reduce the heat to a simmer. Keep an eye on them as they will absorb water rapidly at first. Add water as needed, just enough to keep the beans covered.

After about 2 hours test for doneness. When tender add the salt and cook for about 15 minutes longer. DO NOT add the salt earlier or the beans will never get tender.

Once you have your basic beans you can do many things with them.

 Eat them just like they are. (my personal choice)

Mash them a wee bit with a potato masher to thicken them up.

Mash some beans and put them in a fry pan with some diced onion and some oil  then cook to thicken. 

Put into a blender and turn into a puree.
