Pollo en Mole Verde

Chicken in a Green Sauce

This is a very attractive dish served with a bright green sauce.  Easy to make. 

1 kilo or 2.2 pounds of chicken ( I used legs and thighs) 
2 garlic cloves
2 cups of Chicken broth  (2 cups water and 2 bullion cubes) 
2 Tablespoons of Sesame Seeds
1/2 of a zucchini squash 
2 cloves
1/2 teaspoon of pepper
3 Tablespoons of Olive Oil

4 Spinach Leafs 
4 Lettuce Leafs 
1/2 cup of Fresh Parsley
1/2 cup of Fresh Cilantro
1 Fresh Chili Poblano
1/4 pound of green Tomatoes

Place the chicken parts in a 9X13 pan (or something like that) and put in the oven for one hour at 250.  While this is cooking put everything else into a blender, (it will just fit) and grind it up, After the chicken has cooked one hour increase the oven to 350, pour the green mole over the chicken and cook for another hour.  The chicken should be tender if not cook a bit longer.   The Poblano chili gives it some zip without being hot.  If you like hotter dishes throw a jalapeno or two into the blender.

This is great served with rice.
