Cracked Wheat
and Raisin Bread
This is my one of my favorite ABM bread recipes. It can be made totally in the Abm or you can get fancy and do the last rise on a cookie sheet and make it look real nice. The first time I made this loaf I ate the entire loaf at one sitting. Its really good toasted with Orange Marmalade. You can usually find Cracked wheat in a health food store or you can order it from King Arthur flour. 3/4 cup Cracked Wheat
In a large bowl combine cracked wheat, brown sugar, salt, butter and boiling water. Mix well and allow to cool. Put flour in ABM (you can use either all all purpose flour or all Bread flour but this bread I like the texture of half and half) add yeast. Add cold water to cracked wheat and make sure it is not overly hot. If it is to hot it will kill the yeast. It should be luke warm. If you are making the loaf in the ABM select the setting you use for making raisin bread and at the beep add the raisins. Fancy method. If you want to make it look a lot better (impress someone) Mix one egg and add about 1/2 to the Mixture. Select the dough setting. When ready take the dough out and form into a ball press down slightly. Place on a greased cookie sheet and let rise 1 hour. Use a brush and brush the rest of the egg on the loaf. Then take a sharp knife and cut a criss cross pattern on the loaf about 1 inch apart and 1/2 inch deep. Place in a preheated oven 350 for about 35-45 minutes
