Cream of Carrot Soup

 

Put your carrots,  peeled and washed in boiling water. Let them boil until they are cooked depends on the size.

Have some chicken stock already boiling, made from some chicken bones and powdered bullion

Put the carrots in the blender until they are made into a pulp.

Then put the carrots in some melted butter and you let it season.

Add to the chicken broth one can of Carnation evaporated milk

add the carrots, let everything boil and add some salt to taste

You can serve it with small pieces of toasted bread cut into tiny squares. Or you can buy some cookies specially for the soup at the store.

This recipe is from a Mexican Lady who works in the food service industry.  I can tell she cooks like I do, add some chicken stock.. but she doesn't say how much.   You just have to experiment.   I would guess about 4 cups of chicken broth and 6 or 7 carrots.
