Fruit Salad


One of the joys of living in Mexico is the year round availably of fresh fruit.  And everything is picked ripe and ready to eat.  Bursting full of flavor.  Some fruit is hard to find or very expensive raspberries, blueberries come to mind but Fresh Strawberries almost year round,  Here is a very easy to make fruit salad that tastes really great and the preservatives in the canned peaches make this dish last for up to 10 days.  I make a big batch and eat it all week long.  This is also good if you want to hollow out a melon and fill it with fruit. 

1/2 of a Cantaloupe 
1/4 to a 1/3 of a Watermelon (should be about twice as much fruit as the Cantaloupe 
1 large can of sliced peaches (reserve the liquid)
1 small can of Pineapple chunks (reserve the liquid)

Slice everything into bite size pieces, put into a large bowl, pour the juice from the caned fruit over the top and mix well, cool and let the flavors mingle for a few hours and then serve.  If you have a large number of people (this makes quite a bit) you can add some sliced banana's just before serving.  Note the sliced bananas will not keep and should be added just before serving and should be eaten at that time. 

If you can't find a small can of Pineapple, you can either use the whole can and 1/2 of the juice or just put 1/2 in a jar and use it for a pizza topping or in the next Salad you make.  It seems to last forever in the fridge, I have used leftover pineapple 2 or 3 weeks later and it seemed good. ( I hate to throw things out) 

I have also used fresh pineapple on occasion.  Its a lot more work to cut it up, but its better and cheaper.  Just depends on how much work you want to do.
