Hochata

This is a rice drink that is very popular in Mexico.  The best way to describe it is Liquid rice pudding. 

1 liter   Water (4 cups)
1/2 cup  Rice

3 Liters Water
1 can of Evaporated Milk
1 stick Cinnamon
1/2 cup Almonds
1/2 bottle almond extract

Soak the rice in the one liter of water overnight.  The next day put everything except the water in a blender and liquidize, add water.   Chill and serve cold.
