Hungarian Meatball Goulash


I love meatballs, so this is one of three meatball recipes here. We have one with Red sauce, one with white and I guess this would be pink? This is from busy cooks at About.com

I invented this quick and delicious dish one day when I was craving Hungarian Goulash, but didn't have the ingredients or the time. Don't leave out the caraway seeds, it's what makes this dish so special.

1  tablespoon oil
1 small onion -- chopped
1 tablespoon  paprika
3/4  cup chicken broth
1 green pepper -- chopped
1 clove garlic -- minced
24 frozen cooked meatballs
3/4  teaspoon  caraway seeds
1/2 cup sour cream
egg noodles -- cooked

In a medium saucepan, heat the oil and sauté the onions until softened.  Add the paprika and stir for 1 minute.  Add chicken broth, green pepper, garlic, meatballs and caraway seeds.  Stir well and simmer, partially covered until hot and bubbling and meatballs are heated through.  Stir in sour cream to blend and cook until hot.

Serve over hot cooked egg noodles.

Yield: 4 servings.
