Delicious Lemon Chicken
An easy, flavorful low-fat, low carb dish from The Looney Spoons Low Fat Cookbook.  This is a very good and very quick meal.  I was surprised at how good it tastes.  I made this using things available here in Mexico and its kinda  different but I am sure it tastes the same.  My recipe is below. 


1 cup of low-fat sour cream
1 Tablespoon minced fresh dill (or 1 teaspoon dried)
1 teaspoon lemon pepper or regular pepper
1 teaspoon lemon zest
4 boneless, skinless chicken breasts

Preheat oven to 425 degrees. Combine sour cream, dill, lemon pepper, and lemon zest in a small bowl. Spray a medium casserole dish with nonstick cooking spray. Spread 1/4 of the lemon dill sauce over the bottom of pan. Arrange chicken breasts on top of sauce in a single layer. Pour remaining sauce over chicken. Spread evenly. Bake uncovered for 30-35 minutes, until chicken is tender and no longer pink.
Yield: 4 servings

Mexican version of Lemon Chicken

1 Large sweet Lime (not the little ones a big juicy one) *
1 Cup Cream
1 teaspoon Lemon pepper
4 boneless skinless chicken breasts.

Combine everything and pour it over the Chicken breasts.  Put in a 325 oven for one hour.  ( I like to cook chicken slow and long it seems to be more tender and moist)

* We have a tree in our backyard and the fruit tastes like a combination lemon - Lime.  They are big sweet limes kind of lemony.   But if you buy the big limes in the store and let it good good and ripe,,, starting to turn yellow you should get the same taste.  Or try to find real Lemons in the store.  Then again there is nothing wrong with having Lime Chicken <grin>
