Pickled Garlic 
This something I have only seen in Mexico.  I really like it.  Although I must admit I am a garlic lover.

 3      Cloves     Garlic
   1 1/2  cups      white vinegar
   1      cup          sugar
   2                    cinnamon sticks -- in pieces
   1      teas         whole cloves
   1      teas         whole mustard seeds
   1                     bay leaf
   6      whole      allspice
   1/2  teas         red pepper flakes

    Place the garlic in a large bowl, cover them with boiling water, let them stand for 15 min.    In the meantime, combine the vinegar, sugar, cinnamon sticks, mustard seeds, bay leaf, allspice and pepper flakes in a saucepan.   Bring to a boil, then reduce the heat and simmer, covered, for 5 to 8 minutes.  Drain the garlic thoroughly and return them to the bowl.  Pour the hot vinegar mixture over them and let garlic stand until cool.  Store in tightly capped jars. That's it, and they're great.
