Raisin Bread


This was in the recipe book that came with my first bread Machine, over 10 years ago. ( I am now into my 3rd machine).  One the commonly called the R2D2 from Dak.  Its still far and above the best recipe book that I have seen come with a new bread machine. 

1 1/2 tsp  Yeast
3 cups Bread Flour
1 tsp Salt
2 Tbls  Sugar
2 Tbls  Butter or Margarine
1 Cup less 1 Tbls Warm Water
2 Stiffly beaten egg whites

Beat the egg whites and then set aside.  Add the remaining ingredients to the ABM and start machine. Slowly blend the eggwhites into the flour. Use the French bread setting if you have one otherwise just use normal white. 

You can also use the dough setting.  Remove the dough and roll flat.  Then roll up like a jelly roll, tuck the ends in and let rise one hour.  Then put in a 350 oven till golden brown about 20 minutes.

You can also take a very sharp knife and put some slashes into the top of the bread, then wash the top of the bread with 1 tbls of water, dash of salt and 1/4 tsp cornstarch, and sprinkle with sesame or poppy seeds.
