Spinach Taco’s

 

These are easy to make and taste wonderful.  The only ingredients are a bunch of fresh spinach, a bit of olive oil, some cheese, fresh tortillas (corn or flour) , and some cheese (a mild white is recommended) (I had a bag of pizza cheese that I purchased at Sam's Club and I used that ) .

 Take some fresh Spinach, wash it and let it dry.  If you don't have a salad spinner, just put it in a dish towel and spin it around.  (that's a Mexican Salad Spinner)

Put the Spinach into your food processor and chop it up.  Add a few drops of olive oil, carefully, you just want to moisten the spinach, you can always add more oil, but you can not take it off once it's on.  You should have a finely chopped mixture.  Add a dash of salt and pepper. 

 

Place some of this mixture on a tortilla, add some cheese,  roll up and put in a frying pan, lightly brown the tortilla and serve.  You are not cooking the Spinach just warming it up.  This particular Taco is meant to be served soft.. If you cook to long the taco will become hard and the Spinach overcooked.  Serve warm.
