Baked Swiss Steak
This is a different version of this popular meat dish. I really like the contrasting flavors of the cream on top of the rich tomatoes.
8 slices Bacon
2 lbs Round Steak
2 Cups Sliced Fresh Mushrooms (or big can)
1 can Diced tomatoes with liquid (14 oz)
1/2 Cup Chopped Onion
1 - 2 tsp Dried Tarragon
2 Tbls Cornstarch
2 Tbls Water
1 Cup Whipping Cream (heavy Cream)
In a large oven proof skillet, cook bacon until crisp. Remove, crumble an set aside. Discard all but 1/4 cup drippings. Trim beef and cut into serving size pieces. Brown on both sides in drippings. Top meat with mushrooms, tomatoes, and onions. Sprinkle with bacon and tarragon, cover and bake for 1 1/2 hours at 325. Basting twice.
Remove meat to platter, keeping warm. Combine cornstarch
with water and add to skillet. Bring to a boil cooking for 2 minutes more. Reduce heat and
stir in the cream. Cook uncovered stirring constantly until mixture thickens. Pour over
meat.
