Sherried Pecan Pralines


3 1/2 cups pecans lightly toasted
2 1/4  cups firmly packed brown sugar
1 Cup whipping cream
1 Tablespoon butter
2 Tablespoons Sherry

In a heavy pan cook the brown sugar, cream and butter until bubbly, stirring occasionally.  Cook uncovered until a candy thermometer reaches 234. 

Remove from heat and let stand 5 minutes.  Add Sherry and beat with a wooden spoon until thick and creamy.  Quickly stir in the pecans.   drop by spoonfuls unto waxed paper, to form candies 2 inches in diameter.   Allow to dry at room temp then store in the refrigerator.
