White Beans

This is very different from the usual beans. Its makes a great change of pace.

1 pkg Dried White Beans (1 lb)
250 gm Sliced (and chopped) Bacon
3 Cups Sliced and chopped Tomatoes
1 Large Diced Onion
4 Cloves Chopped garlic (1/2 cup)
1 Tab Fresh parsley

Soak the beans overnight in water, rinse and add fresh water. Cook for 2 hours or until tender. (you might try using one of the jars of prepared white beans in the store I have never used one but it should work)

Cook bacon till crisp, add onion and garlic to the bacon fat and cook until tender (for less calories you could use oil) Add tomato and cook for 4 more minutes.

Add to beans and simmer for ½ hour on stove top or cook one or two hours in a slow cooker. I like using the slow cooker as the beans can’t burn while you are entertaining company and trying to finish the meal. Its one less thing to worry about.

Note. The garlic I use is called elephant garlic in the states, here in Mexico it is very common, it has very large cloves. I like garlic and this recipe has a lot in it. You might want to use less.
